
Perfect Combination Meatloaf
This meatloaf recipe is a combination of a few that I’ve tried over the years. Meatloaf is one of those dishes that gives you lots of room to tweak the ingredients to find that perfect combination. The sauce for this one is killer, so make a little extra.
Ingredients
The Loaf
- 1.5 cups breadcrumbs
- 2 pounds ground beef 85-90% range
- 1 cup milk
- 1 medium onion diced
- 2 stalks celery diced
- 2 large carrots diced
- 1 egg
- Salt to taste
- pepper to taste
The Sauce
- 4 tbsp brown sugar
- 4 tbsp prepared mustard
- 1 cup ketchup Heinz obviously
Instructions
Preheat oven to 375ºF
In a large bowl, combine the beef, breadcrumbs, milk, onion, celery, carrots, egg, salt and pepper. Mix until well combined.
In a separate small bowl, combine the brown sugar, prepared mustard and ketchup.
Add loaf mixture to a lightly greased 5x9 inch loaf pan, or form into a loaf and place in a lightly greased 9x13 baking dish.
Pour the sauce mixture over the loaf.
Bake at 375ºF for 1 hour, and check that the internal temperature has reached at least 165ºF
Recipe Notes
We found that cooking it for the first hour to hour+15 at 375º was good, then check the temperature. If you’re still under 165º internal temperature, increase the oven temp to 400º and re-check every 10 minutes. Also make sure that you keep a good covering of the sauce over the top of the loaf.
