Shrimp + Sausage Skillet

Ingredients

  • 1 lb. medium or large raw shrimp peeled and deveined
  • 6 oz smoked sausage nitrate-free, sliced (kielbasa style)
  • 1 cup red bell pepper diced
  • 2 medium zucchini chopped
  • 2 garlic cloves diced
  • sea salt & pepper to taste
  • 1 pinch red pepper flakes optional
  • 2 tbsp olive oil avocado oil, or coconut oil (divided)
  • small bunch chopped parsley

Instructions

  1. Heat a large skillet over medium-high heat with 1 tbsp oil

  2. Cook shrimp about 3 minutes until pink and opaque, season with sea salt and pepper, then remove from pan and set aside

  3. Add remaining 1 Tbsp of oil into the skillet and cook sliced sausage for about 2 minutes. Add chopped bell peppers and zucchini to the skillet, cook for an additional 5 minutes

  4. Add your cooked shrimp back into skillet along with the garlic, and stir fry everything for about 1 minute to heat through

  5. Add sea salt, ground pepper, and red pepper flakes to taste

  6. Remove from heat, garnish with parsley and serve hot
